Holiday Cooking With Food Allergies and Celiac Disease

For the estimated 1 in 100 people worldwide living with celiac disease, and the many more managing serious food allergies to tree nuts, dairy, eggs or shellfish, the holiday season brings a particular layer of complexity to an already food-centric time of year. Navigating family gatherings, restaurant holiday menus and shared cooking with hidden allergens requires both knowledge and advance planning — but it absolutely does not mean missing out on the joy and abundance of the season.
For celiac disease, the key is understanding that gluten hides in unexpected places: soy sauce, soup broths, seasoning packets, marinades and even some candies and medications can contain wheat derivatives. Cross-contamination in shared kitchen spaces is equally important to address — separate cutting boards, cooking utensils and dedicated baking pans for gluten-free dishes are essential. Fortunately, most traditional holiday foods are naturally gluten-free: roasted meats, vegetables, potatoes, rice and fruit-based desserts all work beautifully without modification.
For tree nut and peanut allergies, holiday baking and appetizer platters require careful review of every ingredient and advance communication with hosts. Always read labels on processed and packaged foods, even familiar products — formulations change.
